AS AN ARCHIPELAGO OF OVER 7000 ISLANDS, PHILIPPINE CUISINE IS COMPOSED OF OVER 100 ETHNO-LINGUISTIC GROUPS AND TRIBES, PLUS COLONIAL INFLUENCES, WHICH MAKE FOR AN INTERESTING, MULTI-FACETED "EAST MEETS WEST"
